Fresh Summer Berries and Mesclun Greens Salad

INGREDIENTS

  • 5-6 ox mesclun greens (field mix) (2 loosely packed cups per person)
  • 1 c  fresh blueberries
  • 1 c fresh blackberries
  • 1 c fresh raspberries
  • 1 c fresh cranberries (cut in half)
  • 1/2 c extra virgin olive oil
  • 1/2 c cider vinegar
  • 2 tsp white sugar + 1/4 c white sugar
  • 3 tbsp toasted slivered almonds

Method:

Wash and dry berries. Place all berries in a medium-sized mixing bowl and sprinkle with 1/4 cup of sugar. Gently mix by hand. Set aside until juices run. In a separate bowl, mix olive oil, cider vinegar, and remaining white sugar (2 tsp.) Set aside. Wash and dry greens. Divide greens into four equal portions and arrange on chilled salad plates. Spoon berry mixture, including juice, on top of the greens. Allow juice to run over the plate. Drizzle approximately 3 thsp of the dressing over the salad. Sprinkle with toasted almonds.
